Project Preserve®: According to America's Second Harvest Food Bank, nearly 70-billion pounds of food have gone to waste this year. That's why local food banks find ways to fight hunger by using potentially wasted food. At the Second Harvest Food Bank of Middle Tennessee, they've invested in equipment to process that food in their own building. It's a one-of-a-kind food rescue program that makes perishable food available to those who need it most.

Project Preserve® began as a program to take bulk food donations and put
them into a stable form we could distribute to our agencies. Our first canning was
made possible in 1992, using all donated ingredients, materials and labor.
Unable to meet the demand with donated products, Project Preserve®,
evolved to a Co-op/Purchase program
